Are there any sites or books that give good examples on
how to use Delphi with Interbase?

I do not think there are many if any.
Maybe some one knows - please point us.

However, why don't you look at the BDE or ADO components that
are explained pretty good? These are all similar (somewhat of course)
and if you know how ADO works - you will quickly get IBX components
working (IBX are a set of native Interbase components for Delphi)

go there and select "Developer's guide" at the top. Then find chapters
related to database and
ADO in particular.

I found IBConsole is a good example on how to use Delphi with Interbase via
IBX. you can download the source from sourceforge.net using CVS.
